CHICKEN, SPINACH & GREEN BEAN CURRY
WHAT YOU NEED:
1 diced chicken breast, palm size,
Handful of fresh baby spinach & green beans,
1 tablespoon tomato purée,
1 teaspoon olive oil,
1 teaspoon garam masala,
1/2 teaspoon turmeric & cumin
1 teaspoon grated fresh ginger
1 clove garlic,
To garnish: crushed chilli ﬂakes, chopped fresh coriander
WHAT YOU NEED TO DO:
Heat the oil in a pan and fry cumin for 1 minute on medium heath and then add the chicken and spices.
Continue cooking until the chicken is lightly browned.
Add the tomato purée, beans and water, mix well and simmer for 15-20 minutes.
Turn off the heat and add the spinach, mix into the curry until the spinach has wilted.
Garnish with chopped coriander and chili flakes.
Vegans or Vegetarians can adjust this beautiful dish by using quorn or tofu instead of chicken or even a whole can of chickpeas (one serving) and using alternative to yoghurt as a topping!
