Aubergine, Goats Cheese & Spinach Shakshuka

There are many versions of Shakshuka and, whichever one you choose, it is a meal or even a hearty snack that will not leave you disappointed.

One of my clients has recently sent me one of Ottolenghi’s recipes that was featured in his column in The Guardian earlier this year.

Firstly, I absolutely love Ottolenghi and his creative and modern twist on Middle Eastern cuisine. Secondly, I had some aubergines and did not want to see go to waste. And, to make it slightly more balanced and adopted for my clients needs, came out a delicious twist on a Shakshuka favourite, inspired by Ottolenghi.

Aubergine, Goats Cheese & Spinach Shakshuka

INGREDIENTS:

  • 2 Aubergines, peeled & cut into 1 cm round chunks
  • 2 cans of chopped tomato
  • 200 gr of goats cheese cut into 1 cm cubes (alternatively, use same amount of tofu/ tampeh or 3 eggs per person)
  • 1 tablespoon of olive oil,
  • 4 gloves of garlic, finely chopped,
  • 100 gr of spinach, washed and chopped
  • season with cumin or garama masala, chilli flakes, black pepper, salt
  • garnish with coriander or basil

METHOD:

Heat the oven to its highest setting.

Peel and slice aubergines into 1 cm thick circle chunks, put on a baking tray, spray with olive oil and season with black pepper and little bit of salt. Roast for 20-30 minutes.

Meanwhile, make the sauce. Heat 1 tablespoon of olive oil in a medium sized, oven proof frying pan on a medium – high heat. Once oil is hot, add garlic and cook stirring occasionally for up to 2 minutes.

Turn down the heat and add tomato, stir for 10 minutes and season with cumin or garama masala, black pepper and salt.

Once the sauce has thickened, stir in spinach and add aubergines. Top with goats cheese and then grill for 10 minutes or until cheese has softened.

Top with some basil or coriander and serve.

This is a recipe that everyone loves and I receive so many requests for, so, here it is… Enjoy as a breakfast, or, ideally, after your Formula 1 healthy breakfast – as a mid-morning snack. My husband loves it as an after dinner healthy snack, so, take your pick…

It is perfectly balanced, with fibre coming from oats, protein, vitamins and minerals from our cutting edge Herbalife24 Rebuild Strength shake (20 gr) with a distinctive chocolate flavour and healthy fats from almond or peanut butter…

What You Need

  • 125 ml of Dark Chocolate Almond/ Soya Milk (under 45 calories per 100ml) or Coconut Milk (Under 25 calories per 100 ml),
  • 30 grams of porridge oats (preferably organic, plain),
  • Rebuild Strength/ Protein Drink Mix (PDM) – 2 scoops per serving (10/15 gr protein)
  • 3 almonds or 1 teaspoon of plain almond/ peanut butter (no sugar/ salt).

Method

Blend 125 ml of Dark Chocolate Almond or Soya Milk or Coconut Milk with 2 Scoops of PDM or 2 Scoops of Rebuild Strength (in the USA – 1 Scoop of Rebuild Strength) and pour over 30 grams of Porridge Oats.


Store in the fridge overnight (or make in the morning and allow 2 hours before eating) and serve for Meal 2 with 3 almonds or 1 teaspoon of plain almond or peanut butter.

Three Bean Avocado Salad Recipe

Three Bean Salad

This is an absolutely fab recipe, truly another one of my favourites.

It is one recipe that could be very useful in this current health crisis caused by coronavirus and used as a healthy alternative to things like canned baked beans, notorious for their both salt and sugar content that can only compromise your immunity further.

It is delicious , one of my clients favourites and allows you to stock up and store ingredients in your pantry and freezer.

It is suitable for vegans and vegetarians alike.

Recipe is also perfectly balanced with optimum amount of plant proteins that one meal should have, great amount of fibre, vitamins, minerals and healthy fats. This is what you need:

the three bean salad

WHAT YOU NEED (serves 1)

200g tin chickpeas, drained and rinsed,

200g tin red kidney beans, drained and rinsed,

1/3 handful fine green beans, chopped, (if frozen, steam for 10 minutes beforehand)

1 shallot/small onion, finely chopped,

1/2 avocado per 1 teaspoon of olive oil for healthy fats if you have no avocados,

1/2 lemon, squeezed

Ground black pepper.

Fresh or dried coriander or other herbs

WHAT YOU NEED TO DO:

Combine the chickpeas, kidney beans, green beans and shallot/ onion together in a bowl.

Add the avocado or olive oil and squeeze the lemon over the salad.

Season with ground black pepper and coriander to taste. You can add some other fresh herbs too if you like!

Enjoy!

You can make several portions of this meal, store in the fridge and consume over 3-5 days.

Peanut Protein Flapjack Bites

Serves: 6/ Prep time: 5 minutes/ Cook time: 2 minutes

Ingredients: 30 g Herbalife Tri Blend, 100 g rolled oats, 1 tbsp smooth peanut butter, 1 tbsp agave nectar, 120 ml almond milk (or other plant-based milk),

Method:

  1. Grease a 6-holed cupcake tin and preheat your oven to 180 C.
  2.  Combine the Tri-Blend with the rolled oats. Mix in the peanut butter, agave nectar and dairy-free milk. Mix until combined.
  3. Transfer the mixture to the tin and place in the centre of the oven for 15 minutes, or until golden.

Ingredients: 30 g Tri Blend Select, 50 g cocoa powder, 50 g coconut oil, 50 ml almond milk, 1 tbsp coconut flakes (5g), 1 tbsp chopped pistachios (10g)

Method:

  1. Place the coconut oil in a microwave-safe bowl and place in the microwave on a medium heat for 2 minutes, or until melted. Stir to combine.
  2. Combine the Herbalife tri-protein, cocoa powder and milk with the melted coconut oil.
  3. Line a tray with parchment paper and press the mixture into the tray. Sprinkle over the coconut flakes and chopped pistachios and transfer the tray to the freezer for 30 minutes before eating. 

Optional: Sprinkle with edible rose petals for garnish.

Pancakes with a difference… for any day not just a Pancake Day

The tradition of eating pancakes on Shrove Tuesday has been around since the 15th century, when certain produce, especially perishables like eggs and butter, had to be used up before fasting began a day later in Lent. Saying that, anything else could go in, therefore, pancakes could possibly be made with anything, not just eggs, butter and flour.

And I like that idea a lot.

Hence, I had an idea of spicing up my pancakes a bit and, when researching for savoury pancake ideas, I could see I was not the only one.

Easy Recipe Formula 1 in Yoghurt

Formula 1 Healthy Breakfast in Yoghurt

Formula 1 Healthy Meal is very versatile and, while it can be consumed as a shake, cold or even hot, it is fantastic when made with yoghurt.

Yoghurt is already great in itself for our gut health and, by adding our Formula 1 Healthy Meal to it – you also increase protein to an optimum amount, fibre as well as 22 other nutrients. It is also much fun as you can, depending on Formula 1 flavour, also spice it up with fruit or spices.

Add 2 x Scoops of your favurite Formula 1 to 250 ml of Low Fat Greek Yoghurt and mix until Formula 1 is fully blended in. Add a little bit of soya or regular milk to reduce the thickness and you can add hndful of berriesand even sprinkle with teaspoon of seeds or ground almonds for some healthy fats.

Making Formula 1 with Kefir

Kefir is all the rage at the moment in the natural health community and many consider it even healthier than yoghurt. It can be made at home and. whilst some health food store sell it, it is not as common as yoghurt. Reason why it is so beneficial is thanks to the cultures present, is is high in nutrients and probiotics and, therefore, very beneficial for digestion and gut health. Many people consider it to be healthier than yogurt.

Formua 1 is delicious equally in Kefir nad, as kefir is more liquid compared to natural yoghurt, it makes it perfect for use with Formula 1 with a bi thicker, but not too thick, consistency at the end. Delicious and healthy too.

Breadless Sandwiches are the way forward…

So, why go through a whole trouble of replacing food staple such as bread and putting, instead, grilled sliced aubergines or courgettes instead? Simple, bread makes me bloated, as it does quite a few people I know. Also, 1 slice of bread happens to be the recommended Government serving of carbs per mal, so, two slices needed for a sandwich just makes the whole meal go out of balance. Yes, even if you use wholemeal/ whole grain (and I hope you doo)… You see, any excess carbs will be stored as fat and anything more than one single slice will pretty much put majority of people in exactly that kind of scenario and we do not want that.

So, finding a way to enjoy sandwiches whilst being pretty smart about it, is quite cool and, as I found, even more delicious. Breadless sandwiches are a great way to enjoy your light dinner or lunch with a difference. Grilled aubergines and courgettes filled with egg omelette, tomato, spinach and feta cheese,are above pictured. I sometimes even put grilled chicken and vegetables. Absolutely delightful, balanced and delicious with added fibre and nutrients.

Alternatively, have an open sandwich, like the one pictured below. My option for that is usually rye bread. Or to avoid highly processed what bread – use spelt bread… still one slice if you want your meal well-balanced. I wont apologise for this advice, you may actually thank me for it 🙂 as it may revolutionise your weight management efforts. You are welcome.

Formula 1 Healthy Breakfast with a creative difference

When people ask me how can I have the same breakfast every single i.e. our Formula 1 shake, I look at them not sure what they mean. obviously, I keep forgetting that people who ask don’t probably know much about Formula 1 (otherwise they would not be asking this question). Of course, I will put aside the fact that their own breakfasts of toasts and cereals is probably what THEY have every day, but, no, I will not go there! (Unless they want me to! LOL)

So, this post is a collection of creations of my breakfasts that all include Formula 1 Healthy Meal just to showcase rather interesting notion that, apart from doing the right thing for the body and giving it all the nutrients it needs every single day, this thing is not just delicious (delicious enough for my boys to love it from since they were tiny for their breakfast, snack and drink before bed time), but they are so versatile – I can go though several months without having the same shake… well, below are whole month worth of them…

Get Spiralising

This was a very simple lunch today… I spiralised 1 courgette each for my husband and myself, mixed in some peas that were left after dinner last night, vegetarian sausages and red Thai curry sauce into it. Very, very delicious. 20gr protein under 350 calories.

Spiralised courgette can be used instead of pasta as courgette are very low in calories (well, it is a vegetable afterall), high in nutrients and moderate amount of fibre. Just add some protein, perhaps another one or two vegetables and perhaps some clean sauce and you are getting a deicious meal that, if pasta was used instead in the same amount it would be in hundreds of calories.
